Meet our Head Chef, Marcus Denby
Wood Fire Grill’s Head Chef, Marcus Denby, has 20 years of kitchen experience in the UK and Australia.
Marcus loves working in the Wood Fire Grill kitchen, and has a passion for grilling – “Grilling meat has been my point of focus for the past 25 years and is a real passion of mine, and now having the chance to grill on open fire is as good as it gets! Sourcing from local producers along with interstate suppliers who show great passion in what they do is important to me, making sure that the process from pasture to plate is achieved in the most ethical manner.”
Prior to Wood Fire Grill, Marcus managed two kitchens with Canteen (Noosa and Coolum). He is a passionate chef and his passion for meaty, Mediterranean dishes shines through in our Autumn menus.
When he’s not in the kitchen, Marcus enjoys spending time with his wife Laura and two daughters Isobel and Ruby, and their two blue staffies Zulu and Bo, or exploring the Noosa Hinterland on his Harley Davidson.
Meet our Restaurant Manager, Simon Bordignon
With a passion for food that was sparked and cultivated in his homeland of Italy, Wood Fire Grill’s restaurant manager Simon Bordignon puts his heart into every service.
Simon boasts more than 20 years’ experience in the hospitality industry, and has worked in many respected restaurants throughout Europe and London.
He met his wife in London and the couple soon moved to Noosa, where they again fell in love – this time with the beauty of the Sunshine Coast.
Having been a member of the Wood Fire Grill team for almost a year, Simon enjoys the fun, relaxed and versatile atmosphere, and food served at WFG.
When he is not working, Simon loves exploring the hinterland with his wife and three children, or swimming at one of our stunning beaches.
