Serve up some ‘shrimps on the barbie’ that will impress thanks to Chef Jeremiah’s Christmas marinade. Simple to make, and with a rich, spicy and smoky flavour, it will transform your seafood barbecue.

1 bunch coriander
1 bunch parsley
2 whole shallots
2 deseeded Long red/ green Chillies
6 cloves of garlic
1 lemon
60ml sherry vinegar
150ml olive oil
2tsp smoked paprika
2tbs flaked sea salt

Finely chop shallots, chillies, and herbs
Zest the lemon and mince the garlic
Combine all ingredients
Generously brush your ingredients and throw on the BBQ
Finish with a squeeze of juice from the zested lemon
